Sugar replacer goes prebiotic

Danisco Sweeteners’ (Redhill, Surrey) Litesse polydextrose can be used to replace sugars and some fats in baked goods.

In addition, Danisco says Litesse can be used to produce a high-fibre white bread, which acts as a prebiotic for good digestive health.

Product formulations with a reduced glycaemic load are also possible, making baked goods that are suitable for consumers on a low-GI diet or for those who need to control their blood sugar levels.
