The organic bread market saw a 10% sales increase in 2006, and 2007 is set to see the same growth. In response, ADM Milling (Brentwood, Essex) supplies Soil Association-certified Organic Stoneground Wholemeal flour, milled at the Allinson Flour Mill, and Organic Strong White flour.
Strict certification controls are applied to the sources of organic wheats, which are derived from Canada, Europe and the UK.
ADM Milling supplies and offers assistance with recipes, as well as advice on sourcing other organic ingredients.
