Icecraft is the latest product to join British Sugar’s (Peterborough, Cambs) stable of ingredients for the UK food and drink industries. The icing sugar is designed specifically for making smoother whiter sugarpaste for cake decoration.

British Sugar says Icecraft has been developed specifically for makers of novelty cakes. “Icecraft has been specially milled to give an optimised particle size,” says Myra Hales, marketing operations manager at British Sugar. “The result is a smoother sugarpaste, with easier handling and a cleaner taste.”

The company also claims that it produces much whiter sugarpaste than conventional icing sugars, with no need for artificial whiteners. The company is even promoting the brand with the question: “Are your whites Icecraft white?”

“If you’re making your own sugarpaste, there’s no need to reformulate when switching to Icecraft,” adds Hales. “It can be used when making icing sugar from scratch with Icecraft and the manufacturer’s choice of ingredients, or with sugarpaste concentrate.”
